Make delicious raspberry yogurt muffins for breakfast or a snack.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup plain yogurt
- 1/4 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
Instructions
- Preheat oven to 375°F (190°C).
- Whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, combine yogurt, milk, egg, and vanilla.
- Add wet ingredients to dry ingredients; mix until just combined.
- Gently fold in raspberries.
- Fill muffin cups.
- Bake for 18-20 minutes.
- Let cool before serving.
Notes
- You can use frozen raspberries.
- Do not overmix the batter.
