Ingredients
- 6 cups cubed watermelon
- 1/4 cup fresh mint leaves, plus more for garnish
- 1/4 cup fresh lime juice
- 2 tablespoons honey or agave nectar (optional, adjust to taste)
- 2 cups sparkling water or club soda, chilled
- Ice
Instructions
- Combine watermelon, mint leaves, lime juice, and honey (if using) in a blender.
- Blend until smooth.
- Pour the mixture through a fine-mesh sieve into a large pitcher or bowl, pressing on the solids to extract all liquid. Discard the solids.
- Stir in the chilled sparkling water.
- Taste and adjust sweetness or lime juice if needed.
- Serve immediately over ice, garnished with fresh mint leaves.
Notes
- For a sweeter drink, add more honey or agave nectar.
- For a tangier drink, add more lime juice.
- This drink can be made ahead of time, but add the sparkling water just before serving to maintain fizz.
- Store any leftover drink in the refrigerator for up to 2 days.
