Description

This recipe makes crispy vegetarian dumplings using rice paper wrappers.


Ingredients

  • 1 tbsp sesame oil
  • 1 tsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 1/2 cup thinly sliced mushrooms
  • 1/2 cup chopped green onions
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1/2 tsp sriracha (optional)
  • 12-15 sheets rice paper
  • Cooking spray or oil for frying


Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add ginger and garlic, sauté for 1 minute until fragrant.
  3. Add carrots, cabbage, and mushrooms. Cook for 5-7 minutes until vegetables are tender-crisp.
  4. Stir in green onions, soy sauce, rice vinegar, and sriracha (if using). Cook for another 2 minutes. Remove from heat and let cool slightly.
  5. Fill a shallow dish with warm water. Dip one rice paper sheet into the water for 15-20 seconds until pliable.
  6. Lay the softened rice paper on a clean surface. Place about 1-2 tablespoons of the vegetable filling in the center.
  7. Fold the bottom edge of the rice paper over the filling, then fold in the sides, and roll tightly from the bottom to the top to form a dumpling. Repeat with remaining rice paper and filling.
  8. Heat a large non-stick skillet over medium heat and spray with cooking spray or add a thin layer of oil.
  9. Place dumplings in the skillet in a single layer, ensuring not to overcrowd.
  10. Cook for 3-5 minutes per side, or until golden brown and crispy.
  11. Serve hot with your favorite dipping sauce.
