Ingredients
- 2 medium delicata squashes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 tablespoon maple syrup (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and slice the delicata squash into half-inch rings, removing seeds.
- Toss the squash rings with olive oil, salt, pepper, garlic powder, and thyme.
- Arrange the squash in a single layer on a baking sheet.
- Roast for 20-25 minutes, flipping halfway, until golden and tender.
- Drizzle with maple syrup if desired before serving.

- No need to peel delicata squash—the skin is edible.
