Description

Easy sheet pan chicken kebabs made without skewers, perfect for a weeknight meal. This recipe uses simple ingredients and minimal cleanup.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine chicken pieces, bell pepper pieces, and red onion pieces.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, thyme, garlic powder, salt, and pepper.
  4. Pour the marinade over the chicken and vegetables. Toss to coat evenly.
  5. Spread the chicken and vegetables in a single layer on a large baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly charred.
  7. Serve hot.
