Description
A quick and easy stir-fry with shrimp, mushrooms, and asparagus.
Ingredients
- 1 pound shrimp, peeled and deveined
- 8 ounces mushrooms, sliced
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a bowl, combine soy sauce and cornstarch.
- Heat sesame oil in a wok or large skillet over medium-high heat.
- Add shrimp and cook until pink, about 2-3 minutes. Remove and set aside.
- Add mushrooms and asparagus to the wok. Stir-fry for 3-4 minutes, until tender-crisp.
- Add garlic and stir-fry for 30 seconds.
- Return shrimp to the wok. Pour in the soy sauce mixture.
- Stir-fry until sauce thickens, about 1 minute.
- Season with salt and pepper.
- Serve over cooked rice.
Notes
- Adjust vegetables based on your preferences.
- Add red pepper flakes for heat.
- Garnish with sesame seeds.
