Description

A quick and easy stir-fry with shrimp, mushrooms, and asparagus.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 ounces mushrooms, sliced
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • Salt and pepper to taste
  • Cooked rice for serving


Instructions

  1. In a bowl, combine soy sauce and cornstarch.
  2. Heat sesame oil in a wok or large skillet over medium-high heat.
  3. Add shrimp and cook until pink, about 2-3 minutes. Remove and set aside.
  4. Add mushrooms and asparagus to the wok. Stir-fry for 3-4 minutes, until tender-crisp.
  5. Add garlic and stir-fry for 30 seconds.
  6. Return shrimp to the wok. Pour in the soy sauce mixture.
  7. Stir-fry until sauce thickens, about 1 minute.
  8. Season with salt and pepper.
  9. Serve over cooked rice.

  • Add red pepper flakes for heat.
