Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste


Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add chopped onion, carrots, and celery.
  3. Pour in chicken broth.
  4. Season with thyme, rosemary, salt, and pepper.
  5. Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  6. Shred the chicken with two forks.
  7. Stir the chicken back into the vegetables and broth.
  8. Serve hot.
