Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Place chicken breasts in the slow cooker.
- Add chopped onion, carrots, and celery.
- Pour in chicken broth.
- Season with thyme, rosemary, salt, and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
- Shred the chicken with two forks.
- Stir the chicken back into the vegetables and broth.
- Serve hot.
Notes
- You can add other vegetables like potatoes or sweet potatoes.
- For a thicker broth, mix a tablespoon of cornstarch with a little cold water and stir it into the slow cooker during the last 30 minutes of cooking.
