A simple and flavorful slow cooker meal combining tender chicken with lemon, herbs, and rice.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Rub chicken breasts with olive oil, salt, and pepper.
- Place chicken in the slow cooker.
- Add rice, chicken broth, lemon juice, lemon zest, garlic, thyme, rosemary, and oregano.
- Stir gently to combine.
- Cover and cook on low for 4-5 hours or until chicken is tender and rice is cooked.
- Garnish with fresh parsley before serving.
Notes
- Use freshly squeezed lemon juice for best flavor.
- Adjust salt to taste.
