Description

Tender and juicy slow cooker teriyaki chicken, perfect for an easy weeknight dinner.


Ingredients

  • 1.5 lbs chicken tenders
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup cornstarch
  • 2 tablespoons water
  • Sesame seeds for garnish
  • Green onions, chopped, for garnish


Instructions

  1. Place chicken tenders in the slow cooker.
  2. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
  3. Pour the teriyaki sauce over the chicken.
  4. Cook on low for 3-4 hours or on high for 1.5-2 hours, or until chicken is cooked through.
  5. In a small bowl, whisk together cornstarch and water to make a slurry.
  6. Remove chicken from slow cooker and set aside.
  7. Pour cornstarch slurry into the slow cooker and cook on high for 5-10 minutes, or until sauce thickens.
  8. Return chicken to the slow cooker and toss to coat with the thickened sauce.
  9. Garnish with sesame seeds and green onions.
  10. Serve over rice or noodles.

Notes

  • For a spicier dish, add a pinch of red pepper flakes.
  • You can use chicken breasts instead of tenders, but adjust the cooking time.
  • Leftovers can be stored in the refrigerator for up to 3 days.
