Description
These soft banana yogurt mini loaves are perfect for lunchboxes. They’re moist and delicious.
Ingredients
- 2 ripe bananas, mashed
- 1/2 cup plain yogurt
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Grease and flour mini loaf pans.
- In a bowl, mix mashed bananas, yogurt, oil, egg, and vanilla.
- In a separate bowl, whisk together flour, sugar, baking soda, and salt.
- Add wet ingredients to dry ingredients. Mix until just combined.
- Pour batter into prepared pans.
- Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Let cool in pans for a few minutes before transferring to a wire rack.
Notes
- You can add chocolate chips or nuts.
- Store in an airtight container.
