These soft banana yogurt mini loaves are perfect for lunchboxes. They’re moist and delicious.


Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup plain yogurt
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour mini loaf pans.
  2. In a bowl, mix mashed bananas, yogurt, oil, egg, and vanilla.
  3. In a separate bowl, whisk together flour, sugar, baking soda, and salt.
  4. Add wet ingredients to dry ingredients. Mix until just combined.
  5. Pour batter into prepared pans.
  6. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  7. Let cool in pans for a few minutes before transferring to a wire rack.
