Description

A tender and moist cake bursting with fresh strawberry flavor.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup fresh strawberries, hulled and sliced
  • Optional: Powdered sugar for dusting


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Whisk together flour, baking soda, and salt.
  3. Cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla.
  5. Gradually add dry ingredients alternately with buttermilk, beginning and ending with dry ingredients.
  6. Gently fold in strawberries.
  7. Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool completely before dusting with powdered sugar (optional).

Notes

  • For best results, use room temperature ingredients.
  • You can substitute frozen strawberries, but thaw and drain them first.
