Description

A flavorful and healthy Southwest Chicken Quinoa Salad. It’s packed with protein and perfect for meal prep.


Ingredients

  • 1 cup quinoa
  • 2 cups chicken broth
  • 1.5 lbs chicken breast, cooked and shredded
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/2 cup chopped cilantro
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Cook quinoa according to package directions using chicken broth.
  2. Cook and shred the chicken breast.
  3. In a large bowl, combine cooked quinoa, shredded chicken, black beans, corn, red bell pepper, and red onion.
  4. In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
  5. Pour dressing over the salad and toss to combine.
  6. Stir in cilantro.
  7. Serve immediately or chill for later.
