Description
A flavorful and healthy Southwest Chicken Quinoa Salad. It’s packed with protein and perfect for meal prep.
Ingredients
- 1 cup quinoa
- 2 cups chicken broth
- 1.5 lbs chicken breast, cooked and shredded
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/2 cup chopped cilantro
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Cook quinoa according to package directions using chicken broth.
- Cook and shred the chicken breast.
- In a large bowl, combine cooked quinoa, shredded chicken, black beans, corn, red bell pepper, and red onion.
- In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Stir in cilantro.
- Serve immediately or chill for later.
Notes
- Feel free to add avocado for extra creaminess.
- For a spicier salad, add a pinch of cayenne pepper.
