A flavorful and easy-to-make Spicy Salmon Coconut Rice Bowl.
Ingredients
- Salmon Fillets (2)
- Coconut Rice (2 cups cooked)
- Soy Sauce (2 tbsp)
- Sriracha (1 tbsp, or to taste)
- Lime Juice (1 tbsp)
- Avocado (1, sliced)
- Cucumber (1/2, diced)
- Red Onion (1/4, thinly sliced)
- Cilantro (for garnish)
- Sesame Seeds (for garnish)
Instructions
- Cook the coconut rice according to package directions.
- In a bowl, whisk together soy sauce, sriracha, and lime juice.
- Marinate the salmon in the sauce for 10 minutes.
- Cook the salmon (grill, bake, or pan-fry) until cooked through.
- Flake the salmon.
- Assemble the bowls: Rice, salmon, avocado, cucumber, red onion.
- Garnish with cilantro and sesame seeds.
Notes
- Adjust the sriracha to control the spice level.
- Use pre-cooked rice to save time.
- Add other vegetables like edamame or carrots.
