  • Coconut Rice (2 cups cooked)
  • Soy Sauce (2 tbsp)
  • Sriracha (1 tbsp, or to taste)
  • Lime Juice (1 tbsp)
  • Avocado (1, sliced)
  • Cucumber (1/2, diced)
  • Red Onion (1/4, thinly sliced)
  • Cilantro (for garnish)
  • Sesame Seeds (for garnish)


Instructions

  1. Cook the coconut rice according to package directions.
  2. In a bowl, whisk together soy sauce, sriracha, and lime juice.
  3. Marinate the salmon in the sauce for 10 minutes.
  4. Cook the salmon (grill, bake, or pan-fry) until cooked through.
  5. Flake the salmon.
  6. Assemble the bowls: Rice, salmon, avocado, cucumber, red onion.
  7. Garnish with cilantro and sesame seeds.
