Description

A delicious coffee cake with fresh strawberries and creamy cheese.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup fresh strawberries, sliced
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together butter and sugar. Beat in egg and vanilla.
  4. Gradually add dry ingredients to wet ingredients, alternating with milk.
  5. Gently fold in sliced strawberries.
  6. In a separate bowl, beat cream cheese, powdered sugar, and vanilla.
  7. Pour half of the batter into the prepared pan. Spread cream cheese mixture over the batter. Top with remaining batter.
  8. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool before serving.

Notes

  • You can use frozen strawberries, but thaw and drain them first.
  • For a richer flavor, add a crumble topping.
  • Store leftovers in the refrigerator.
