Description
A delicious coffee cake with fresh strawberries and creamy cheese.
Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup fresh strawberries, sliced
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a baking pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream together butter and sugar. Beat in egg and vanilla.
- Gradually add dry ingredients to wet ingredients, alternating with milk.
- Gently fold in sliced strawberries.
- In a separate bowl, beat cream cheese, powdered sugar, and vanilla.
- Pour half of the batter into the prepared pan. Spread cream cheese mixture over the batter. Top with remaining batter.
- Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before serving.
Notes
- You can use frozen strawberries, but thaw and drain them first.
- For a richer flavor, add a crumble topping.
- Store leftovers in the refrigerator.
