Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup strawberry yogurt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine yogurt, milk, oil, egg, and vanilla.
- Add wet ingredients to dry ingredients and mix until just combined.
- Gently fold in chopped strawberries.
- Fill muffin cups 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before serving.
Notes
- You can substitute frozen strawberries, no need to thaw.
- Add a crumble topping for extra flavor.
