Make delicious strawberry yogurt muffins.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup plain yogurt
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together yogurt, milk, oil, egg, and vanilla.
- Add wet ingredients to dry ingredients and mix until just combined.
- Gently fold in chopped strawberries.
- Fill muffin cups about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let cool before serving.
Notes
- You can use frozen strawberries.
- Add a crumble topping for extra flavor.
