Ingredients
- Chicken breast: 1 pound
- Olive oil: 1 tablespoon
- Corn: 2 cups (fresh or frozen)
- Red onion: 1/2, diced
- Bell pepper: 1, diced
- Chili powder: 1 teaspoon
- Cumin: 1 teaspoon
- Paprika: 1/2 teaspoon
- Salt: to taste
- Black pepper: to taste
- Lime: 1, juiced
- Cilantro: 1/4 cup, chopped
- Cotija cheese: 1/4 cup, crumbled (optional)
- Sour cream or Greek yogurt: for serving (optional)
Instructions
- Season chicken with salt, pepper, chili powder, cumin, and paprika.
- Heat olive oil in a pan. Cook chicken until done.
- Remove chicken and cook corn, onion, and bell pepper.
- Add lime juice.
- Shred or dice chicken.
- Assemble bowls with chicken, corn mixture, cilantro, and cheese.
- Serve with sour cream or yogurt.
