Description
Delicious sweet chili chicken kabobs.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1/2 cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, whisk together sweet chili sauce, soy sauce, olive oil, garlic powder, and pepper.
- Add chicken to the marinade and toss to coat. Marinate for at least 30 minutes.
- Thread chicken, bell peppers, and red onion onto skewers.
- Preheat grill to medium-high heat.
- Grill kabobs for 8-10 minutes, turning occasionally, until chicken is cooked through.
- Serve hot.
Notes
- You can add other vegetables, like zucchini or mushrooms.
- For extra flavor, brush the kabobs with extra sweet chili sauce while grilling.
- Make sure the chicken reaches an internal temperature of 165°F (74°C).
