Description

Simple sweet chili chicken thighs cooked in one skillet. A quick and easy weeknight dinner.


Ingredients

  • 6 boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1/2 cup sweet chili sauce
  • 1/4 cup soy sauce
  • 1 tbsp rice vinegar
  • 1 clove garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • Chopped green onions, for garnish


Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear chicken thighs for 3-4 minutes per side, until browned.
  4. In a bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, garlic, and red pepper flakes.
  5. Pour sauce over chicken thighs.
  6. Simmer for 10-15 minutes, or until chicken is cooked through and sauce has thickened.
  7. Garnish with green onions.
  8. Serve immediately.
