A flavorful and easy vegetarian curry.


Ingredients

  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1/4 tsp red pepper flakes (optional)
  • 1 sweet potato, peeled and cubed
  • 1 can (14 oz) chickpeas, rinsed and drained
  • 1 can (13.5 oz) coconut milk
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, for garnish


Instructions

  1. Heat coconut oil in a pot.
  2. Sauté onion until softened.
  3. Add garlic, ginger, curry powder, turmeric, and red pepper flakes. Cook for 1 minute.
  4. Add sweet potato, chickpeas, coconut milk, and vegetable broth.
  5. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer until sweet potato is tender.
  7. Garnish with cilantro.

Notes

  • You can add other vegetables, like spinach or bell peppers.
  • Serve with rice or naan.
