Description
A flavorful and easy vegetarian curry.
Ingredients
- 1 tbsp coconut oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1/4 tsp red pepper flakes (optional)
- 1 sweet potato, peeled and cubed
- 1 can (14 oz) chickpeas, rinsed and drained
- 1 can (13.5 oz) coconut milk
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Heat coconut oil in a pot.
- Sauté onion until softened.
- Add garlic, ginger, curry powder, turmeric, and red pepper flakes. Cook for 1 minute.
- Add sweet potato, chickpeas, coconut milk, and vegetable broth.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer until sweet potato is tender.
- Garnish with cilantro.
Notes
- You can add other vegetables, like spinach or bell peppers.
- Serve with rice or naan.
