Taco Stuffed Sweet Potatoes (60 Minutes)

Description

Sweet potatoes roasted and filled with a spicy taco meat mixture, topped with cheese and fresh cilantro.


Ingredients

  • 2 medium sweet potatoes
  • 1 tbsp olive oil
  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 1 (1 oz) packet taco seasoning
  • 1/2 cup water
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped


Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes several times with a fork and rub with olive oil.
  2. Roast sweet potatoes for 45-60 minutes, or until tender.
  3. While sweet potatoes roast, brown ground beef or turkey in a large skillet over medium-high heat. Drain excess fat.
  4. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  5. Stir in taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, until the liquid has mostly evaporated.
  6. Once sweet potatoes are cooked, slice them lengthwise down the middle but not all the way through. Fluff the inside with a fork.
  7. Spoon the taco meat mixture into each sweet potato.
  8. Top with shredded cheese and return to the oven for 5 minutes, or until cheese is melted and bubbly.
  9. Garnish with fresh cilantro before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the taco meat.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
