Description
Sweet potatoes roasted and filled with a spicy taco meat mixture, topped with cheese and fresh cilantro.
Ingredients
- 2 medium sweet potatoes
- 1 tbsp olive oil
- 1 lb ground beef or turkey
- 1 onion, chopped
- 1 (1 oz) packet taco seasoning
- 1/2 cup water
- 1/2 cup shredded cheddar cheese
- 1/4 cup fresh cilantro, chopped
Instructions
- Preheat oven to 400°F (200°C). Pierce sweet potatoes several times with a fork and rub with olive oil.
- Roast sweet potatoes for 45-60 minutes, or until tender.
- While sweet potatoes roast, brown ground beef or turkey in a large skillet over medium-high heat. Drain excess fat.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, until the liquid has mostly evaporated.
- Once sweet potatoes are cooked, slice them lengthwise down the middle but not all the way through. Fluff the inside with a fork.
- Spoon the taco meat mixture into each sweet potato.
- Top with shredded cheese and return to the oven for 5 minutes, or until cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the taco meat.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
