Description

Delicious Teriyaki Chicken Skewers served with fluffy rice.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup teriyaki sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 onion, cut into 1-inch pieces
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)
  • Green onions, chopped, for garnish (optional)


Instructions

  1. In a bowl, whisk together teriyaki sauce, soy sauce, honey, sesame oil, garlic, and ginger.
  2. Add the chicken cubes to the marinade and toss to coat. Marinate for at least 30 minutes (or up to 4 hours) in the refrigerator.
  3. Preheat grill to medium-high heat or preheat oven to 400°F (200°C).
  4. Thread chicken, bell peppers, and onion onto skewers.
  5. If grilling: Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through and vegetables are tender. If baking: Place skewers on a baking sheet and bake for 20-25 minutes, or until chicken is cooked through.
  6. Serve skewers over cooked rice. Garnish with sesame seeds and green onions, if desired.

Notes

  • Soaking wooden skewers in water for 30 minutes before grilling prevents them from burning.
  • Adjust the amount of honey to your preference.
  • Feel free to add other vegetables like zucchini or mushrooms.
