Description
Delicious Teriyaki Chicken Skewers served with fluffy rice.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup teriyaki sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 onion, cut into 1-inch pieces
- Cooked rice, for serving
- Sesame seeds, for garnish (optional)
- Green onions, chopped, for garnish (optional)
Instructions
- In a bowl, whisk together teriyaki sauce, soy sauce, honey, sesame oil, garlic, and ginger.
- Add the chicken cubes to the marinade and toss to coat. Marinate for at least 30 minutes (or up to 4 hours) in the refrigerator.
- Preheat grill to medium-high heat or preheat oven to 400°F (200°C).
- Thread chicken, bell peppers, and onion onto skewers.
- If grilling: Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through and vegetables are tender. If baking: Place skewers on a baking sheet and bake for 20-25 minutes, or until chicken is cooked through.
- Serve skewers over cooked rice. Garnish with sesame seeds and green onions, if desired.
Notes
- Soaking wooden skewers in water for 30 minutes before grilling prevents them from burning.
- Adjust the amount of honey to your preference.
- Feel free to add other vegetables like zucchini or mushrooms.
