Ingredients

  • Chicken thighs: 6, boneless and skinless
  • Soy sauce: 1/2 cup
  • Mirin: 1/4 cup
  • Sake: 2 tablespoons
  • Brown sugar: 2 tablespoons
  • Garlic: 2 cloves, minced
  • Ginger: 1 teaspoon, grated
  • Cornstarch: 1 tablespoon
  • Water: 1 tablespoon
  • Sesame seeds: For garnish
  • Green onions: For garnish, sliced


Instructions

  1. Combine soy sauce, mirin, sake, brown sugar, garlic, and ginger in a bowl.
  2. Marinate chicken thighs in the teriyaki sauce for at least 30 minutes, or up to 2 hours.
  3. Mix cornstarch and water to create a slurry.
  4. Heat a pan over medium-high heat.
  5. Sear chicken thighs until browned and cooked through.
  6. Remove chicken from the pan.
  7. Pour remaining marinade into the pan and bring to a simmer.
  8. Add the cornstarch slurry and cook until sauce thickens.
  9. Return chicken to the pan and coat with the sauce.
  10. Garnish with sesame seeds and green onions.
  11. Serve with rice.

Notes

  • For a thicker sauce, add more cornstarch.
  • You can use chicken breasts instead of thighs. Adjust cooking time.
