Ingredients
- Chicken breast (4 oz)
- Cooked quinoa (1/2 cup)
- Cucumber (1/2 cup, diced)
- Cherry tomatoes (1/2 cup, halved)
- Red onion (1/4 cup, thinly sliced)
- Kalamata olives (1/4 cup, pitted)
- Feta cheese (2 tbsp, crumbled)
- Greek dressing (2 tbsp)
Instructions
- Cook chicken breast. Season with salt and pepper.
- Cook quinoa according to package directions.
- Chop vegetables.
- Combine all ingredients in a bowl.
- Drizzle with Greek dressing.
- Serve and enjoy!
