Description

A creamy pasta dish featuring cheese tortellini, bacon, and a rich egg-parmesan sauce.


Ingredients

  • 1 (19-ounce) package refrigerated cheese tortellini
  • 6 slices bacon, cut into 1/2-inch pieces
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper


Instructions

  1. Cook tortellini according to package directions; drain, reserving 1/2 cup pasta water.
  2. Meanwhile, cook bacon in a large skillet over medium heat until crisp. Remove bacon from skillet, reserving 1 tablespoon drippings. Crumble bacon and set aside.
  3. Whisk together eggs, Parmesan cheese, and pepper in a small bowl.
  4. Add tortellini, egg mixture, and reserved bacon drippings to the skillet. Toss quickly to coat, adding reserved pasta water 1 tablespoon at a time, until a creamy sauce forms.
  5. Stir in crumbled bacon. Serve immediately.

Notes

  • For a richer sauce, add a splash of heavy cream with the egg mixture.
  • Garnish with fresh parsley or extra Parmesan cheese, if desired.
