Description
A refreshing winter salad with crisp apples, crunchy walnuts, and a flavorful maple Dijon vinaigrette.
Ingredients
- 4 cups mixed greens
- 2 apples, sliced
- 1/2 cup walnuts, chopped
- 1/4 cup crumbled goat cheese (optional)
- For the vinaigrette:
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Whisk together the vinaigrette ingredients in a small bowl.
- In a large bowl, combine the mixed greens, apple slices, and walnuts.
- Drizzle the vinaigrette over the salad and toss gently to coat.
- If desired, sprinkle with goat cheese.
- Season with salt and pepper to taste.
- Serve immediately.

- Feel free to substitute pecans or other nuts for the walnuts.
