Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped celery
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can crushed tomatoes
  • 1 cup chicken broth
  • 1 teaspoon Creole seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Cooked rice, for serving


Instructions

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add onion, bell pepper, and celery and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Stir in crushed tomatoes, chicken broth, Creole seasoning, thyme, and cayenne pepper (if using). Season with salt and pepper. Bring to a simmer.
  5. Add shrimp and cook until pink and cooked through, about 3-5 minutes.
  6. Serve over cooked rice.
