Description

A creamy pasta salad featuring rotini pasta, fresh vegetables, cheddar cheese, and a mayonnaise-based dressing.


Ingredients

  • 1 (16 ounce) package rotini pasta
  • 1 cup mayonnaise
  • ¼ cup milk
  • 1 tablespoon white sugar
  • 1 tablespoon white vinegar
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup chopped celery
  • 1 cup chopped green bell pepper
  • ½ cup chopped red onion
  • 1 ½ cups shredded cheddar cheese


Instructions

  1. Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until al dente, about 8 to 10 minutes. Drain and rinse with cold water; set aside to cool.
  2. While pasta is cooking, whisk together mayonnaise, milk, sugar, vinegar, salt, and pepper in a large bowl.
  3. Add cooled pasta, celery, green bell pepper, red onion, and cheddar cheese to the dressing. Stir to combine all ingredients.
  4. Cover the bowl and refrigerate for at least 2 hours before serving to allow flavors to meld.

Notes
