Description
A creamy pasta salad featuring rotini pasta, fresh vegetables, cheddar cheese, and a mayonnaise-based dressing.
Ingredients
- 1 (16 ounce) package rotini pasta
- 1 cup mayonnaise
- ¼ cup milk
- 1 tablespoon white sugar
- 1 tablespoon white vinegar
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 cup chopped celery
- 1 cup chopped green bell pepper
- ½ cup chopped red onion
- 1 ½ cups shredded cheddar cheese
Instructions
- Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until al dente, about 8 to 10 minutes. Drain and rinse with cold water; set aside to cool.
- While pasta is cooking, whisk together mayonnaise, milk, sugar, vinegar, salt, and pepper in a large bowl.
- Add cooled pasta, celery, green bell pepper, red onion, and cheddar cheese to the dressing. Stir to combine all ingredients.
- Cover the bowl and refrigerate for at least 2 hours before serving to allow flavors to meld.
Notes
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
- For extra flavor, consider adding cooked and crumbled bacon or diced ham.
