Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 3/4 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Cream Cheese Swirl:
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 large egg yolk


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, whisk sugar, pumpkin puree, oil, eggs, and vanilla.
  4. Combine wet and dry ingredients.
  5. Make cream cheese swirl: Beat cream cheese, powdered sugar, and egg yolk.
  6. Fill muffin liners halfway with batter.
  7. Add a spoonful of cream cheese swirl.
  8. Top with remaining batter.
  9. Bake for 18-20 minutes.
