Delicious pumpkin muffins with a creamy cream cheese swirl.
Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 1/2 cups granulated sugar
- 3/4 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- Cream Cheese Swirl:
- 4 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 large egg yolk
Instructions
- Preheat oven to 375°F (190°C).
- Whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a separate bowl, whisk sugar, pumpkin puree, oil, eggs, and vanilla.
- Combine wet and dry ingredients.
- Make cream cheese swirl: Beat cream cheese, powdered sugar, and egg yolk.
- Fill muffin liners halfway with batter.
- Add a spoonful of cream cheese swirl.
- Top with remaining batter.
- Bake for 18-20 minutes.
