Ingredients
- 1 cup cooked quinoa
- 1/2 cup grilled chicken
- 1/2 cup chopped cucumber
- 1/4 cup cherry tomatoes
- 1/4 avocado, sliced
- 2 tablespoons lemon vinaigrette
- Salt and pepper to taste
Instructions
- Cook quinoa according to package directions.
- Grill chicken or use pre-cooked.
- Chop cucumber and tomatoes.
- Assemble bowl: quinoa, chicken, cucumber, tomatoes, avocado.
