Description

Ingredients

  • 1 package of pre-made mini tart shells
  • 1 cup lemon curd
  • 3 egg whites
  • 1/2 cup granulated sugar
  • 1/4 tsp cream of tartar
  • Purple food coloring (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Fill each tart shell with lemon curd.
  3. In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
  4. Gradually add sugar, beating until stiff, glossy peaks form.
  5. Add purple food coloring, if desired, and mix gently.
  6. Spoon meringue onto lemon curd.
  7. Bake for 8-10 minutes, or until meringue is lightly browned.
  8. Let cool before serving.
