Description

A flavorful and easy Asian-inspired comfort meal.


Ingredients

  • 8 oz dried noodles
  • 1 tbsp oil
  • 1 lb chicken breast, cubed
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sriracha (or to taste)
  • 1 tbsp honey
  • 1/4 cup water
  • chopped peanuts and green onions for garnish


Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. Heat oil in a pan. Cook chicken until browned.
  3. Add bell pepper and broccoli. Cook until tender.
  4. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, sriracha, honey, and water.
  5. Pour sauce over chicken and vegetables. Simmer until sauce thickens.
  6. Add cooked noodles. Toss to coat.
  7. Garnish with peanuts and green onions. Serve hot.

Notes

  • Adjust sriracha for spice level.
  • Add more vegetables as you like.
  • Serve with lime wedges.
