A flavorful and easy Asian-inspired comfort meal.
Ingredients
- 8 oz dried noodles
- 1 tbsp oil
- 1 lb chicken breast, cubed
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sriracha (or to taste)
- 1 tbsp honey
- 1/4 cup water
- chopped peanuts and green onions for garnish
Instructions
- Cook noodles according to package directions. Drain and set aside.
- Heat oil in a pan. Cook chicken until browned.
- Add bell pepper and broccoli. Cook until tender.
- In a bowl, whisk together peanut butter, soy sauce, rice vinegar, sriracha, honey, and water.
- Pour sauce over chicken and vegetables. Simmer until sauce thickens.
- Add cooked noodles. Toss to coat.
- Garnish with peanuts and green onions. Serve hot.
Notes
- Adjust sriracha for spice level.
- Add more vegetables as you like.
- Serve with lime wedges.
