Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup soy sauce
- 1/4 cup honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- Cooked broccoli or your favorite vegetables
Instructions
- Cut chicken into bite-sized pieces. Season with salt and pepper.
- Heat olive oil in a pan. Cook chicken until browned. Set aside.
- Sauté onion and garlic.
- Add rice and toast for a minute.
- Pour in chicken broth. Bring to a boil, then simmer.
- Combine soy sauce, honey, rice vinegar, and sesame oil for the sauce.
- Add cooked chicken to the sauce. Simmer.
- Serve rice topped with chicken and sauce.
- Add your choice of vegetables.
