Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • Cooked broccoli or your favorite vegetables


Instructions

  1. Cut chicken into bite-sized pieces. Season with salt and pepper.
  2. Heat olive oil in a pan. Cook chicken until browned. Set aside.
  3. Sauté onion and garlic.
  4. Add rice and toast for a minute.
  5. Pour in chicken broth. Bring to a boil, then simmer.
  6. Combine soy sauce, honey, rice vinegar, and sesame oil for the sauce.
  7. Add cooked chicken to the sauce. Simmer.
  8. Serve rice topped with chicken and sauce.
  9. Add your choice of vegetables.
